Keep your non-cutting hand completely flat on top of the chicken breast when slicing horizontally to avoid accidental knife cuts.
Slice 2 chicken breasts in half horizontally to yield 4 cutlets. Place the cutlets flat on a cutting board and pound both sides thoroughly with a spiked meat mallet until evenly flattened and tenderized with small punctures. Season both sides evenly with 1 tsp salt and 0.5 tsp black pepper.
Watch out
Do not skip pounding the meat flat, otherwise the thick parts will remain raw while the exterior breading burns in the pan.
