Use a heavy cleaver when chopping whole chicken; keep fingers curled away from the blade to prevent slipping.
Take 1 rooster (approx. 3000g). Chop off head and feet with a cleaver, split from back to remove organs, and wash clean. Peel neck skin and carefully discard lymph nodes and trachea. Chop off claws, then cut chicken into uniform large chunks (approx. 4cm).

Black lymph nodes on neck and tail contain impurities and off-flavors
remove thoroughly or the stew will taste gamey
