Be careful when using a knife and spoon inside the fish belly to avoid being pricked by fish bones or cut by the blade.
Inspect inside 1 sea bass belly. Use a knife to lightly scrape away blood clots inside the belly cavity, then hold under running tap water and scrape along the backbone with a spoon from tail to head. Wash thoroughly until the cavity is completely clean without blood residue.
Watch out
Blood along the backbone is the main source of fishy odor and must be scraped clean with a spoon, otherwise the steamed fish will taste strongly fishy.
