Sift 100g glutinous rice flour into a bowl, add 20g brown sugar, 10g maltose, and 90ml hot milk (reserving 5-10ml to adjust moisture). Stir with a wooden spoon, gradually adding remaining liquid until the batter becomes thick with slight resistance.
Watch out
Add hot milk gradually and reserve some, otherwise pouring too much at once will make the batter too watery to form.
