Hold the lobster tail firmly on a stable cutting board when using a heavy chef knife, otherwise the knife can slip and cause severe cuts.
Rinse 6 lobster tails under tap water, pat them completely dry with paper towels, place them on a cutting board flesh-side up, and carefully slice down the middle of each shell to butterfly the meat open.
