In a mixing bowl, combine 200g all-purpose flour, 1/2 tsp salt, 1/2 tsp carom seeds, and 3 tbsp ghee. Rub the ghee into the flour thoroughly until it forms a tight fist shape when squeezed, ensuring proper moyan. Gradually add 150ml lukewarm water and knead into a stiff dough, firmer than roti dough. Cover the bowl and let it rest for 15 to 20 minutes.

Moyan needs to be thoroughly rubbed into the flour until it forms a tight fist shape, otherwise samosas will not turn crispy.
